Kendra Gaffney was sprouted in the dirty south of Baton Rouge, Louisiana and raised in the small town of Makanda, Illinois where she attended college at Southern Illinois University at Carbondale. After graduating with a B.S. in Food and Nutrition, specializing in Dietetics, Kendra went on to complete her graduate program/Dietetic Internship at Vanderbilt University Medical Center in Nashville Tennessee. After working as a clinical dietitian for 8 years in the Panhandle of Florida, in 2010 Kendra traveled the entire lower 48 searching for a place to open her dream business, Nutritious Thoughts. The sights, sounds, and spirit of Asheville pulled her to the Valley of the Blue Ridge Mountains. Kendra is now living her dream as the Founder of Nutritious Thoughts. In addition, she is a Certified Eating Disorder Registered Dietitian and Approved Supervisor (CEDRD-S) through the International Association of Eating Disorder Professionals (iaedp). This certification was established to promote standards of excellence within the field of eating disorders. Kendra also enjoys serving her local community as an Advisory Council Member and Support Group Leader for the local non-profit organization, Carolina Resource Center for Eating Disorders.
